Honey Mustard Chicken Salad



Try this simple and delicious recipe, full of protein and perfect for lunch or dinner.


1⁄4 c
orange juice
2 T
Olive Oil
1 t
Orange Zest (Optional)
1 T
1 T
Dijon Mustard
1⁄4 c
red wine vinegar
3 T
Mrs. Dash seasoning mix (Original Blend)
1 t
salt (Optional)
3 c
Chicken (Cooked, cut into cubes)
1 1⁄2 c
Celery (Thinly slices or diced)
1 cn
Mandarin Orange segments (Drained (11 oz can))
1⁄3 c
Almonds (Sliced and toasted)
1 c
Chow Mein Noodles (Optional)
1 bn
Lettuce (Leaves)


  1. Combine vinegar, oil, orange juice, zest, salt, Mrs. Dash, honey and Dijon mustard in a container with a tight fitting lid, cover & shake well to combine.
  2. Combine chicken and celery in a medium bowl, pour dressing over chicken mixture and toss to mix well.  Cover & chill for 2-3 hours.
  3. At the same time, place canned mandarin oranges in refrigerator so they will be cold when you prepare the salad.  To prepare, add drained mandarin oranges & almonds to chilled chicken mixture, toss to combine.
  4. Serve on lettuce leaves and top with chow mein noodles if you like.
